  • ½ cup breadcrumbs (or gluten-free alternative)
  • 1 egg (for binding)
  • 2 garlic cloves (minced)
  • ¼ cup sun-dried tomatoes (finely chopped)
  • ¼ cup feta cheese (crumbled)
  • ¼ cup fresh parsley (chopped)
  • ¼ cup red onion (finely chopped)
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Optional Additions

  • ½ teaspoon red pepper flakes (for heat)
  • 1 teaspoon lemon zest (for extra freshness)
  • 1 tablespoon Greek yogurt (for added moisture)

Instructions

Step 1: Prepare the Meatball Mixture

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, sun-dried tomatoes, feta, parsley, onion, oregano, paprika, salt, and pepper.
  2. Mix gently using your hands or a spoon. Don’t overmix to keep the meatballs tender.

Step 2: Shape the Meatballs

  1. Use a cookie scoop or tablespoon to portion out the mixture.
  2. Roll into 1-inch (2.5 cm) meatballs and place them on a plate or baking sheet.
  3. (Optional) Chill the meatballs in the fridge for 10-15 minutes to help them hold their shape better while cooking.

Option 1: Oven-Baked (Healthier & Hands-Free)

  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Arrange meatballs in a single layer.
  4. Bake for 15-20 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (74°C).

Option 2: Pan-Fried (Golden & Crispy)

  1. Heat 1-2 tablespoons olive oil in a large skillet over medium heat.
  2. Place meatballs in the pan in a single layer (work in batches if needed).
  3. Cook for 3-4 minutes per side, turning to brown evenly.
  4. Cover and cook for another 5 minutes, until fully cooked through.
