Aleppo Pepper Curry is a bold and flavorful fusion of Middle Eastern and Indian spices, featuring the smoky-sweet taste of Aleppo pepper blended with classic curry ingredients. For the Curry Base
- 2 tbsp olive oil
- 1 large onion finely chopped
- 3 garlic cloves minced
- 1- inch ginger grated
- 2 tsp Aleppo pepper
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp turmeric
- ½ tsp smoked paprika
For the Sauce
- 1 can diced tomatoes 14 oz / 400g
- 1 cup coconut milk
- 1 lb 450g chicken, chickpeas, or tofu
- Salt & black pepper to taste
- Fresh cilantro for garnish
Step 1: Sauté the Aromatics
Heat olive oil in a large pan over medium heat.
Add chopped onions and cook until golden, about 5 minutes.
Stir in garlic and ginger, cooking for another 1 minute.
Step 2: Toast the Spices
Add Aleppo pepper, cumin, coriander, turmeric, and smoked paprika.
Stir well and toast for 1-2 minutes until fragrant.
Step 3: Build the Sauce
Pour in diced tomatoes, stirring well.
Simmer for 5 minutes, letting the flavors meld.
Step 4: Add Protein or Vegetables
Toss in chicken, chickpeas, or tofu, coating well with the sauce.
Pour in coconut milk, bring to a boil, then reduce to a simmer.
Cover and cook for 15-20 minutes until the protein is fully cooked.
Step 5: Finish and Serve
Season with salt and pepper to taste.
Garnish with fresh cilantro.
Serve hot with basmati rice or naan bread.
