Ingredients
  

For the Curry Base

  • 2 tbsp olive oil
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1- inch ginger grated
  • 2 tsp Aleppo pepper
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp turmeric
  • ½ tsp smoked paprika

For the Sauce

  • 1 can diced tomatoes 14 oz / 400g
  • 1 cup coconut milk
  • 1 lb 450g chicken, chickpeas, or tofu
  • Salt & black pepper to taste
  • Fresh cilantro for garnish

Instructions
 

Step 1: Sauté the Aromatics

  • Heat olive oil in a large pan over medium heat.
  • Add chopped onions and cook until golden, about 5 minutes.
  • Stir in garlic and ginger, cooking for another 1 minute.

Step 2: Toast the Spices

  • Add Aleppo pepper, cumin, coriander, turmeric, and smoked paprika.
  • Stir well and toast for 1-2 minutes until fragrant.

Step 3: Build the Sauce

  • Pour in diced tomatoes, stirring well.
  • Simmer for 5 minutes, letting the flavors meld.

Step 4: Add Protein or Vegetables

  • Toss in chicken, chickpeas, or tofu, coating well with the sauce.
  • Pour in coconut milk, bring to a boil, then reduce to a simmer.
  • Cover and cook for 15-20 minutes until the protein is fully cooked.

Step 5: Finish and Serve

  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro.
  • Serve hot with basmati rice or naan bread.
