Ingredients

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon optional, for extra flavor

For the Baklava Mix-In:

  • 6 sheets phyllo dough
  • ½ cup unsalted butter melted
  • 1 cup chopped pistachios or walnuts/almonds
  • ¼ cup honey or sugar syrup
  • 1 teaspoon ground cinnamon

Optional Garnishes:

  • Crushed pistachios for topping
  • Honey drizzle for extra sweetness
  • Rose water or orange blossom water for a floral note

Instructions

Step 1: Prepare the Baklava Pieces

  • Preheat the oven to 350°F (175°C).
  • Layer the phyllo dough sheets, brushing each with melted butter.
  • Sprinkle the chopped nuts and cinnamon between the layers.
  • Bake for 15–20 minutes or until golden brown and crispy.
  • Drizzle honey over the baked phyllo layers and allow them to cool completely.
  • Once cooled, break into small crumbles and set aside.

Step 2: Make the Ice Cream Base

  • In a large bowl, whisk together the cream, milk, sugar, vanilla extract, and cinnamon until the sugar dissolves.
  • Pour the mixture into an ice cream maker and churn according to manufacturer instructions (usually 20–25 minutes).

Step 3: Combine Baklava and Ice Cream

  • When the ice cream reaches a semi-frozen consistency, gently fold in the crumbled baklava pieces.
  • Continue churning for another 5 minutes until well combined.

Step 4: Freeze the Ice Cream

  • Transfer the ice cream into an airtight container and smooth the top.
  • Cover with parchment paper or plastic wrap to prevent ice crystals.
  • Freeze for at least 4 hours or overnight for the best texture.
