- - 1½ cups dry orzo pasta
- - 2 cups baby spinach chopped
- - 1 red bell pepper diced
- - ½ cup Kalamata olives pitted and sliced
- - ½ cup sun-dried tomatoes thinly sliced
- - ¾ cup cooked chickpeas or canned, rinsed and drained
- - ½ cup feta cheese crumbled
- - 3 tablespoons fresh parsley chopped
- - Juice of 1 large lemon about 3 tablespoons
- - ¼ cup extra virgin olive oil
- - ½ teaspoon garlic powder
- - Salt and black pepper to taste
- - Optional: pinch of dried oregano or Italian seasoning
**Prep the Ingredients**
Dice the bell pepper, chop the spinach and parsley, slice the olives and sun-dried tomatoes, rinse and drain the chickpeas, and crumble the feta.
**Make the Dressing**
Whisk together lemon juice, olive oil, garlic powder, salt, pepper, and oregano (if using). Taste and adjust seasoning.
**Assemble the Salad**
In a large bowl, combine the cooled orzo, vegetables, chickpeas, and feta. Pour dressing over the top and toss gently.
Notes:
