4 cups romaine lettuce chopped 1 cup cherry tomatoes halved 1 cup cucumber sliced into half-moons ½ cup red onions thinly sliced ⅓ cup Kalamata olives pitted and halved ½ cup crumbled feta cheese ¼ cup extra virgin olive oil 2 tablespoons red wine vinegar or fresh lemon juice 1 teaspoon dried oregano Salt and black pepper to taste Optional Additions: Grilled chicken salmon, or shrimp for added protein Fresh herbs like parsley or mint for extra flavor Nuts or seeds almonds, walnuts, pumpkin seeds for crunch
Prepare the Vegetables Wash and chop the romaine lettuce.
Slice the cucumbers into half-moons.
Cut the cherry tomatoes in half.
Thinly slice the red onions.
Make the Dressing In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), dried oregano, salt, and black pepper.
Taste and adjust seasoning as needed.
Assemble the Salad In a large bowl, add the chopped lettuce, tomatoes, cucumbers, onions, olives, and feta cheese.
