Ingredients
  

For the Dressing:

  • ½ cup extra virgin olive oil
  • 3 tbsp red wine vinegar or fresh lemon juice
  • 1 tsp Dijon mustard optional, for emulsification
  • 1 clove garlic finely minced
  • 1 tsp dried oregano
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • 1 tsp honey or maple syrup optional, for balance

Instructions
 

Mix the Ingredients:

  • In a small bowl or glass jar, combine olive oil, red wine vinegar (or lemon juice), and Dijon mustard.

Add Seasonings:

  • Stir in minced garlic, oregano, salt, and black pepper.

Whisk or Shake:

  • Whisk the mixture thoroughly or shake it in a sealed jar until well combined and slightly thickened.

Taste & Adjust:

  • Adjust acidity, sweetness, or salt as needed. Serve immediately or refrigerate for up to 7 days.
