- ½ cup extra virgin olive oil
- 3 tbsp red wine vinegar or fresh lemon juice
- 1 tsp Dijon mustard optional, for emulsification
- 1 clove garlic finely minced
- 1 tsp dried oregano
- ½ tsp salt adjust to taste
- ¼ tsp black pepper
- 1 tsp honey or maple syrup optional, for balance
Mix the Ingredients:
In a small bowl or glass jar, combine olive oil, red wine vinegar (or lemon juice), and Dijon mustard.
Taste & Adjust:
Adjust acidity, sweetness, or salt as needed. Serve immediately or refrigerate for up to 7 days.
