  • ½ cup chickpeas garbanzo beans, drained and rinsed
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

Prepare the Base:

  • In a large salad bowl, combine romaine lettuce and baby spinach.

Add Vegetables:

  • Toss in cherry tomatoes, cucumber slices, and red onions.
