  • 1 Mixing Bowl To toss chickpeas with spices

  • 1 Clean towel For drying chickpeas

Ingredients
  

  • 2 cups canned or cooked chickpeas drained and rinsed
  • 1 tbsp olive oil
  • 1 tbsp za’atar spice blend
  • ½ tsp sea salt adjust to taste

Instructions
 

  • Dry chickpeas thoroughly. Use a towel to remove surface moisture. Let air-dry for 30 minutes if possible.
  • Preheat oven to 400°F (200°C).
  • First roast (dry): Spread chickpeas on a baking tray in a single layer. Roast for 15–20 minutes without oil.
  • Season: Remove tray, toss chickpeas in olive oil, za’atar, and sea salt.
  • Final roast: Return to oven and roast for another 15–20 minutes until crispy.
  • Cool: Let cool completely on the tray to finish crisping.
  • Store: Keep in an airtight jar at room temperature for up to 7 days.
