Ingredients
  

  • 1 cup chickpea flour
  • ¾ cup warm water
  • ½ cup diced tomatoes
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil
  • Salt pepper, optional cumin or turmeric

Instructions
 

  • Mix flour and water into a batter. Let rest for 10–15 minutes.
  • Fold in tomatoes and herbs.
  • Heat olive oil in non-stick pan, pour batter.
  • Cook 3–4 minutes per side on medium heat.
  • Garnish and serve with your favorite Mediterranean toppings.
