Ingredients
  

  • 4 medium zucchini
  • ½ cup quinoa dry
  • ¼ cup cream cheese or dairy-free
  • ¼ white onion finely chopped
  • 1 garlic clove minced
  • red bell pepper diced
  • 1 tbsp olive oil
  • 1 tbsp apple or lemon juice
  • 1 tbsp chopped parsley
  • 1 tbsp fresh thyme
  • Salt & black pepper to taste

Instructions
 

  • Preheat oven to 390°F (200°C). Line a tray with parchment paper.
  • Cook quinoa per instructions. Let cool slightly.
  • Hollow zucchini with spoon. Reserve flesh for filling.
  • Sauté onion, garlic, and bell pepper in oil.
  • Combine sautéed mix with quinoa, cheese, herbs, juice, and zucchini flesh.
  • Stuff each zucchini boat and bake for 25–30 mins.
  • Optional: Cover with foil if browning too fast.
