For the Salad

Instructions
 

  • Prepare the Carrot Ribbons
  • Using a vegetable peeler, shave the carrots lengthwise into thin ribbons. Place them in a large mixing bowl.
  • Whisk the Dressing
  • In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, maple syrup, ginger, and garlic until fully emulsified.
  • Combine and Rest
  • Pour the dressing over the carrot ribbons. Toss well to coat evenly. Let the salad rest for 10 minutes to allow the flavors to absorb.
  • Serve
  • Plate the salad and top with sesame seeds and sliced scallions. Serve immediately or chill for later.
